The theory does not look promising...
In theory Virgin Coconut Oil shouldn't really be able to work miracles with thinning hair because any reversal in hair growth or density has to come from the blood supply and what is consumed. By the time the hair leaves the follicle it’s already dead so just applying a product to the hair (itself) cannot produce more growth.
